A few months ago we became certified BBQ judges. It was so fun! We were taught by 2 of the best judges in the St Louis area and probably even the US. Since we already were familiar with several of the rules about acceptable types of meats, presentation, and scoring from competing, we learned a lot about the process of judging. After a few hours and some practice, we took the oath and left as certified judges. It was a great way to learn about BBQ and we had so much fun doing it! While we were there the judges spoke about their experiences and some of the items they’ve tried at competitions and tried to make on their own. I stopped listening and started fantasizing about food when they mentioned Candied Bacon. First and foremost…yum! Second it’s also known as pig candy. So when we got home, I found this recipe and made it…delicious!
